How do I change the logged in user? ALTUI shows one of my ‘other users’ as logged in every time I access the local URL.

You basically cannot, it is the user in position 0 of the user data structure sent by the Vera.
Maybe in the future if I implement role based access control I then would try something but that does not sound obvious

Is this the reason why it now says unregistered with my wife username, after i made a login for her?
