If I put a bulb in a lamp that is controlled by a switch on the wall and I turn off the bulb with the controller will the switch on the wall no longer work to turn the bulb on and off ?

It depends on the bulb. Each manufacturer may be different.
Most bulbs, such as the
Linear/GoControl LB60Z-1 Z-Wave Dimmable LED Light Bulb
or the
GE Link, Zigbee A19 Smart Connected LED Light Bulb
have a “secret knock” where you turn the switch Off and On quickly and the bulb turns On.
But, if the switch is turned off, you obviously cannot turn the bulb on remotely.
