New to HA, Need Light Control Advice

I am planning on getting into the HA thing and want to start out with just some lighting control, HVAC, and outlets.
I am going to get a VeraEdge but am having a hard time figuring out what dimmers to get for my kitchen area.

I have three separate circuits for the kitchen lights.

 1. Over sink w/ one switch (3 bulbs, Phillips 8W PAR20 )
 2. Kitchen general area with two switches (8 bulbs, currently some 35W-50W Equivalent PAR20s. Will be changing to LED soon.)
 3. Under cabinets w/ one switch control (6 bulbs, not sure on type yet)

I just changed the three bulbs in circuit 1 to the Phillips LEDs from halogen. They are great compared to the Halogens in terms of heat generation and light feel.

What dimmer(s) would I need to get for:

 1. To control circuit 1
 2. To control circuit 2 (This circuit needs a remote switch as well)

What is a good “Instant-On” outlet?

Thanks for the help in my noobness.
What dimmer(s) would I need to get for:

 1. To control circuit 1
The Linear WD500Z-1 Z-Wave 500-watt Wall Mount Dimmer Switch will be the most inexpensive dimmer option capable of dimming (dimmable!)LED bulbs.

If you need the Instant Status(research the forums) feature to trigger a scene then you would likely prefer the Leviton VRMX1-1LZ 1000W Universal Magnetic Low Voltage Dimmer

2. To control circuit 2 (This circuit needs a remote switch as well)

The Leviton VRMX1-1LZ 1000W Universal Magnetic Low Voltage Dimmer can be used for 3-way circuits by combining it with the Leviton VP00R-1LZ Digital Matching Remote.

I'm not sure what your meaning of "Instant-On" outlet is. Any of these receptacles turn on instantly when the Z-Wave command is issued. As far as “instant on” outlets, I’m not sure what I was thinking, lol.
