My EZMotion motion sensor triggers and stays triggered for some time. This is a problem if I want to arm my security system as the alert goes of right away.
How can I change this?
And by the way, why can’t I switch off the siren if it’s fired?

On your newly added motion sensor, click the wrench button. Then select the Device Properties Tab.
Enter your desired On Time. Close the dialog box and click save.
Your vera, after it reloads, will come back with a message on the device saying “waiting for walkup to configure settings” when you see that, press the include button on your sensor. Voila!

This will also change the time a light is switched on and therefore I have to set the timer (of the lamp) to a different time (e.g. with Lua). I first thought these were two separate settings.
How long the light stays on depends on when you decide to turn off the light.
If you turn it off when the sensor is not tripped, yes.
