Yes absolutely. Just make sure if the switch is the type that has leads (rather tan screw terminals) that you cap them off so there is no risk of shorting with another wire.
Just for the record, there are one button scene controllers available specifically for this purpose. They can be used for virtual 3-way setups as well as controlling other devices. These switches do not directly control a load.

This is a one gang two button scene controller that also switches two loads.

This is a one gang one button scene controller. It does not directly switch a load. It can be used in a 3-way configuration with one of the buttons/loads of the above two button controller.

The switches without a neutral, such as the VRI06-1LZ, will not work without a load (nor will they work if the bulb is dead).
