How can a trigger a scene, for when I press “Away” or “Home”, etc?
There are several decisions about this, have you searched the forum?
Well, I did see some people use Virtual Switches but I know some people also use PLEG, and I wanted to see how they do it
PLEG allows you to use the different UI7 House Modes as Input Triggers. You can name them as you wish. You can then include the named Triggers in Conditions and use the associated Actions to control your devices.
There is more explanation in PLEG Basics.
There is also a HouseModes plugin in the App Store which may be useful to you.

Well, if you are going to use PLEG to detect the changed Mode, you would probably have it also perform the actions rather than use a scene.
If you want to keep the actions in the scene, you could use the HouseModes plugin rather than PLEG.
It would work as you suggested, though.
is this because “Homemodes” plugin has instant feedback?
I doubt that HouseModes is any faster than PLEG.
Status change may have a delay set. Click the > next to My MOdes on the dashboard and scroll down to near the bottom. Locate the ‘How much time to wait…’ header. You may want to change the value of 30 to 0 in the ‘Wait 30 seconds before changing to any mode other than home’.
Both the HouseModes Plugin and PLEG must POLL the house modes to determine when it changes. We both poll with a 15 second interval.
PLEG is more efficient in how it obtains the current house mode …
PLEG makes a luup.get_attr call, House Modes plugin make a http request to itself. (luup.get_attr option was not available at the time the plugin was created).
So in both cases … actions can be delayed by up to 15 seconds.
This is independent of, and in addition to, the delay indicated by @BOFH.
